Salsa Fresca

1cup tomatoes
1whole fresh tomato-quartered
2whole jalpeno peppers, seeded and sliced
1whole fresh specialty pepper, optional
3whole green chiles
1whole red onion, quartered
1-- garlic clove, minced
1/2whole lime, juiced
4 1/2sprigs fresh cilantro
1-- splash olive oil
1pinch salt and white pepper
1pinch cumin, optional
1teaspoon oregano, fresh, chopped


  1. Drain canned tomatoes (reserve juice). Coarsely dice: fresh tomato, red onion, peppers and green chilies. Combine all ingredients in a food processor. Process to desired consistency.
