Salsa Fresca

  • Yield 32 servings


1 cup tomatoes
1 whole fresh tomato-quartered
2 whole jalpeno peppers, seeded and sliced
1 whole fresh specialty pepper, optional
3 whole green chiles
1 whole red onion, quartered
1 -- garlic clove, minced
1/2 whole lime, juiced
4 1/2 sprigs fresh cilantro
1 -- splash olive oil
1 pinch salt and white pepper
1 pinch cumin, optional
1 teaspoon oregano, fresh, chopped


  1. Drain canned tomatoes (reserve juice). Coarsely dice: fresh tomato, red onion, peppers and green chilies. Combine all ingredients in a food processor. Process to desired consistency.
