Salsa Crude with Penne

  • Yield 4 servings


1 medium onion, chopped
3 cloves garlic, minced
3 tablespoons olive oil
1 large tomato, seeded and chopped
1 pinch dried oregano
1/4 cup white wine, any light, crisp white is fine
1 pinch salt/pepper to taste
12 ounces penne
1/2 cup grated parmesan


  1. Cook penne according to directions on package.
  2. While penne is cooking, saute onion in olive oil in a medium sized skillet. Stir frequently,
  3. When onion is translucent, add garlic and saute 1 minute.
  4. Add tomatoes & oregano and stir while sauteeing for several minutes. Tomatoes should start to lose their moisture for the sauce.
  5. Taste and season if necessary.
  6. Drain pasta and add to the tomato mixture.
  7. Add parmesan, toss and serve.
