Salmon LeOrange

Ingredients

6 ounces Salmon filet
6 fluid ounces Fresh Squeezed Orange juice
2 slices Red Onion
4 pinches cilanto
4 pinches oregano
4 pinches celery salt
4 pinches sea salt
4 pinches fresh ground black pepper
6 tablespoons Extra Virgin olive oil
6 ounces black beans
6 ounces corn
6 ounces Red onion

Instructions

  1. Mix all 5 dry ingredients in a bowl
  2. Add the extra virgin olive oil
  3. Mix the ingredients with the olive oil 
  4. Marinade the Salmon in this mixture for 10 minutes
  5. Heat your skillet to medium on the stove
  6. Put the filet in the skillet for 1 minute on either side to get a crisp
  7. Put  onion slices on top of the filet
  8. Pour in the orange juice
  9. Cook the filet in the orange juice until it has  reduced down to a sauce
  10. While the filet is cooking dice the red onion and mix it in with the corn and black beans
  11. Let it sit while the fish cooks
  12. Serve the filet on a plate with the orange juice reduction on top
  13. Garnish with the mixture of corn, red onions,  and black beans
