Rotisserie Chicken Salad

  • Yield 6+ servings


1 whole rotisserie chicken
1 1/2 cups leafy greens part of the celery
2 medium apple(of any kind)
1/4 cup cranberries
1/4 cup pepitas (set some aside for garnish)
1 1/2 cups mayo


I like to leave the wings and legs for another time. Besides my boys like the legs. I took those off along with the skin and put them aside. The I proceeded to take the bones off and dicing the rest of the meat. Mix the mayo into the chicken and then add as you chop; roughly chop the celery and the apple. Then just add everything else. what else did I forget oh yeah enjoy.
