I must admit this Roasted Pork Loin Filet with Apples and Fennel is the least labor intensive meal that delivers the biggest punch of flavor that I’ve made in a while. The perfectly seasoned pork loin filet gets a quick pan sear then in the oven to roast with the most heavenly smoked bacon crumbles on top.

While I pan seared the pork loin filet I had a sheet pan of tart sliced apples, sweet fennel and some beautiful rainbow carrots getting a head start in the oven to make this a meal in 30 minutes. A quick drizzle of honey and balsamic and you are ready to eat!

Roasted Pork Loin Filet with Apples and Fennel

This Roasted Pork Loin Filet with Apples and Fennel is perfectly seasoned gets a quick pan sear then roasts with smoked bacon crumbles on top and is served with honey roasted apples and fennel. Cooked and on the table in 30 minutes, too!

Ingredients 

  • 1.75 lb Smithfield Applewood Smoked Bacon Marinated Fresh Pork Loin Filet
  • 2 tbsp olive oil (separated)
  • 1 lb rainbow carrots
  • 1 large fennel bulb
  • 1 large apple of choice
  • pinch of salt
  • pinch of black pepper
  • 1 tbsp honey
  • 1 tbsp balsamic vinegar

Instructions 

  • Preheat the oven to 450˚F.
  • Line a baking sheet with parchment paper, aluminum foil or use a Silpat silicone baking mat.
  • Trim the stalks of the fennel off and discard (or save for soup stock). Trim bottom off and slice lengthwise in half and then each half into 1/2” pieces. Trim ends off carrots and slice apple into 8-10 pieces. Toss all in a bowl with 1 tablespoon of olive oil and salt and pepper.
  • Transfer to baking sheet and roast until tender and caramelized, about 25 minutes.
  • While vegetables roast: In a large skillet with an oven proof handle, heat remaining 1 tablespoon of oil over medium heat. Add the tenderloin and cook, turning frequently, until brown on all sides, about 8-10 minutes. Transfer to the oven and roast for 12 minutes. (See Note 1)
  • Remove pork from the pan and allow to rest 3-5 minutes. Cut the tenderloin into thick 1″ slices.
  • When vegetables are done, drizzle with balsamic vinegar and honey and toss to coat evenly. Taste and season with kosher salt if necessary and serve alongside sliced Pork Loin Filet.

Notes

1. Don’t overcook your pork! The finished pork should be between 145°F – 150°F and allow meat to rest at least 3-5 minutes.

  2. So how is it possible to bake this for only 15 minutes when the package says cook 30-40 minutes per pound?

    1. Are you looking at a pork loin roast or the tenderloin/filet? The entire campaign was a meal under 30 minutes and I used what they termed “Smithfield Applewood Smoked Bacon Marinated Fresh Pork Loin Filet”.

    1. Hello Susan! Thanks for stopping by. I do not know the recipe that Smithfield’s uses for what is marinating the pork loin filet exactly. It’s their secret! BUT, the crumbled bacon on top adds such a lovely, smokey aspect to the pork as it renders and cooks in the oven. A friend of mine also just used a pork loin filet and seasoned it with salt, pepper, garlic and onion powders and crumbled bacon on top and she said it was fantastic, too. Maybe you could reach out to Smithfield and ask where you might purchase their product near your location? Hope this helps.

  7. Love quick meals like this! Haven’t had pork in quite some time and this looks delicious! Love the classic combo with apples and the fennel is the perfect touch to give that anise flavour.
