Preheat oven to 425F. Slice peaches into large bite size pieces. Place on a baking sheet covered in parchment paper and sprinkle with sugar and salt. Place in the oven and roast for 20 to 25 minutes until the peaches caramelize and lose their juices. Pour the peaches with juice in a bowl.
While the peaches are roasting, combine honey and yogurt in a medium bowl.
In 8 ounce glasses or parfait cups, assemble the parfaits by adding a layer of yogurt to the bottom of the glasses. Next add a few spoonfuls of the peaches on top of the yogurt and then add a spoonful of granola on top of the peaches. Repeat layers until the serving glasses are full. Top the parfaits with a spoonful of peaches and a sprinkle of granola. Serve.
