Rhubarb Pie with Cream Cheese

  • Yield: 6 servings


4 cupspieces rhubarb
1 cup-- sugar
4 TBSP.-- cornstarch
1/2 tsp-- salt
1package cream cheese
1/2 cup-- sugar
2-- eggs


Cook first 4  ingredients until thick.  Pour into unbaked pie shell, Bake @ 424* for 10 minutes.

Mix topping until creamy, Put on top of rhubarb and bake for 30 minutes or until done in center.
