Reunion Cake: Quick Cocoa Cake w/mint icing

  • Yield 6-10 servings


6 tablespoons cocoa
2 cups all purpose flour
1 1/2 cups sugar
1/8 teaspoon salt
1 teaspoon baking soda
2 whole eggs
3/4 cup butter, melted
1 cup cold water
1 teaspoon vanilla flavoring
1/3 cup butter, softened
1 pinch salt
1 pound powdered sugar
3 drops peppermint
3 drops green food coloring
1 tablespoon milk


  1. Sift cocoa, flour, sugar, salt, & baking soda into a large mixing bowl.
  2. Make a well in the middle of the dry ingredients.  Add the eggs, water, and vanilla.  Mix and beat well.  Pour batter into a buttered and floured tube pan.
  3. Bake at 350 degrees for 1 hour.  Cool in pan for 10 minutes & turn out onto cake plate.
  4. Ice the cooled cake with the mint icing.  Drizzle top of cake with 1/2 cup melted chocolate chips, allowing the chocolate to run down sides of cake.
