Reunion Cake: Quick Cocoa Cake w/mint icing

Ingredients
- 6 tablespoons cocoa
- 2 cups all purpose flour
- 1 1/2 cups sugar
- 1/8 teaspoon salt
- 1 teaspoon baking soda
- 2 whole eggs
- 3/4 cup butter, melted
- 1 cup cold water
- 1 teaspoon vanilla flavoring
- 1/3 cup butter, softened
- 1 pinch salt
- 1 pound powdered sugar
- 3 drops peppermint
- 3 drops green food coloring
- 1 tablespoon milk
Instructions
Sift cocoa, flour, sugar, salt, & baking soda into a large mixing bowl. Make a well in the middle of the dry ingredients. Add the eggs, water, and vanilla. Mix and beat well. Pour batter into a buttered and floured tube pan. Bake at 350 degrees for 1 hour. Cool in pan for 10 minutes & turn out onto cake plate. Ice the cooled cake with the mint icing. Drizzle top of cake with 1/2 cup melted chocolate chips, allowing the chocolate to run down sides of cake.
