You are here: Home » Recipes » Reunion Cake: Quick Cocoa Cake w/mint icing Reunion Cake: Quick Cocoa Cake w/mint icing Recipe by Relish Contributor Yield 6-10 servings PrintEmail Ingredients 6 tablespoons cocoa2 cups all purpose flour1 1/2 cups sugar1/8 teaspoon salt1 teaspoon baking soda2 whole eggs3/4 cup butter, melted1 cup cold water1 teaspoon vanilla flavoring1/3 cup butter, softened1 pinch salt1 pound powdered sugar3 drops peppermint3 drops green food coloring1 tablespoon milk Instructions Sift cocoa, flour, sugar, salt, & baking soda into a large mixing bowl. Make a well in the middle of the dry ingredients. Add the eggs, water, and vanilla. Mix and beat well. Pour batter into a buttered and floured tube pan. Bake at 350 degrees for 1 hour. Cool in pan for 10 minutes & turn out onto cake plate. Ice the cooled cake with the mint icing. Drizzle top of cake with 1/2 cup melted chocolate chips, allowing the chocolate to run down sides of cake.
