Red Velvet Cookies

  • Yield 36 pieces


1 box red velvet cake mix
1/3 cup vegetable oil
2 -- eggs
1 can cooking spray
1 can cream cheese icing (or icing of your choice)


Heat oven to 375 degrees. Spray cookie sheet, set aside. Mix the cake mix, oil and eggs until blended well. The dough will be slightly sticky. Roll into 1/2 balls, put on cookie sheet, flatten slightly with your hand. Bake for 8 minutes, or until the top of the cookies start to crack.

Cool for 2 minutes, remove from cookie sheet and put on cooling racks. When completely cooled frost with your favorite icing.
