Chicken Roasted with Cilantro Pesto

Ingredients
- 1 -- white or red onion
- 4 cloves of garlic
- 1 bunch of cilantro leaves with stems
- 1 tablespoon of oregano
- 2 tablespoons of white vinegar
- 1 bunch of cilantro
- 1 -- green sweet pepper
- 2 tablespoons of salt or salt to your taste
- 1 whole chicken
Instructions
In a blender put all ingredients until you get a "pesto" looking marinate
? Wash your chicken with cold water and trim any fat, pat dry
? With a knife , cut little cavities on the chicken
? Place chicken in a bowl and gently rub the "recaito" marinated all over it and inside the cavities. Cover chicken with plastic or in plastic freezer bag
? Refrigerate for two hours (for more flavor, marinate overnight)
? Preheat oven 350 degrees
? Place chicken in a roasting pan and pour the remaining marinate. Cover it with lid or aluminum foil
? Roast for 40 minutes
? After 40 minutes take the lid off and cook for another 30 minutes until golden brown
? If you want your chicken to cook get more brown on the outside, Place it on the roasting lower rack for the skin for 10 to get a little crispier
? Once your chicken is done, take it out of and let it rest for 5 minutes before carving.
? Pour over the remaining cooked juices of the :recaito" marinated.
