Raw Cauliflower Couscous

  • Yield 6 servings


1 head cauliflower
1 bunch parsley
1 bunch cilantro
1 tablespoon fresh mint
1/3 cup sun-dried tomatoes
10 -- kalamata olives
1-1/2 teaspoon black pepper
1/4 teaspoon himalayan sea salt (opt)
1 to 2 tablespoon olive oil


  1. Food process cauliflower until fine, like couscous.  Spoon into large bowl.
  2. Food process cilantro, parsley, mint, tomato and olives.
  3. Stir ingredients together with a wooden spoon, fold in pepper and olive oil to taste.  Chill; serve chilled or at room temperature.
