Ravioli with Goat Cheese and Sage Filling

  • Yield 4 servings

Homemade ravioli is about to get super simple thanks to wonton wrappers.

Mark Boughton

Place ravioli on a baking sheet and freeze, then store in a plastic bag in the freezer up to 6 months.

Cooking Spray
8 ounces goat cheese, softened to room temperature
2 eggs, well beaten
1/4 cup minced onion
4 cloves garlic, minced
12 leaves sage, fresh
24 wonton wrappers

1. Combine goat cheese, eggs, onion and garlic.

2. Place 2 tablespoons of water in a small dish. Working with one wonton wrapper at a time, and keeping the remaining wrappers covered, moisten the edges of the wrapper. Place 2 teaspoons cheese mixture in center of wrapper; top with a sage leaf. Place another wrapper on top, pressing well with a fork to seal edges.

3. Drop ravioli (frozen or fresh) into a pot of boiling water. They’re done when they rise to the surace. Makes 12 ravioli.
