Raisin-Filled Cookies

A raisin-filled cookie that's perfect for the holiday season.

This is a wonderful cookie recipe that has been handed down from my great-grandmother to my grandmother to my mom to me. I always make it at Christmas time, and it is my husband's favorite Christmas treat.

Ingredients

Raisin filling:
1 box California Raisins
1/4 cup sugar
1/2 cup water
1 teaspoon vanilla
Cookie dough:
1/2 cup shortening
1 cup granulated sugar
1 egg
2 1/2 cups flour
2 teaspoons cream of tartar
1 teaspoon baking soda
1 teaspoon vanilla
1/2 cup milk

Instructions

  1. Preheat oven to 350F. Butter a large baking sheet.
  2. Grind raisins. Combine raisins, sugar and water in a pan on the stove. Cook over medium heat until thick. Remove from heat and stir in vanilla. Let cool.
  3. Combine  shortening, sugar and egg; mix well. Add sifted flour, cream of tartar, soda  and vanilla; mix well. Add milk; mix well.
  4. Roll dough thin and cut with a cookie cutter. Place on baking sheet. Spoon 1 teaspoon raisin filling on top. Cover with another piece of cut dough. 
  5. Bake 12 to 15 minutes until lightly browned.

Note: We use an old-fashioned grinder to grind the raisins.
