Spicy Chicken Kababs on Raisin Couscous

1/2stick Butter
1-- Shallot
3cups Chicken Stock
1/2teaspoon Salt
1/2teaspoon Pepper
1 1/2cups Couscous
1/4cup Golden Raisins
1/4cup Slivered Almonds
-- Melt butter in a saute pan and add shallots, cook till lightly brown.
-- Add Stock, salt, pepper, and raisins. Bring to a boil and turn off hea teaspoon
-- Add couscous and cover for 5 minutes.


Chicken Kababs:
2 Pounds Chicken Tenders
1 C. Yogurt
2 Garlic Cloves
1 Tsp. Salt
1/2 Tsp. Pepper
1/2 Tsp. Paprika
1 Tsp. Chili Powder
1 Tsp. Tumeric
1/2 Tsp. Sugar
6 Roma Tomatoes Cut in Quarters
4 Sweet Onions Cut in Quarters
12-15 Wooden Skewers
Soak wooden skewers for 1 hour.
Marinate chicken in yogurt,garlic, sugar, and spices. Refrigerate for 3-4 hours or overnight.
Take chicken out of refrigerator and assemble on wooden skewers alternating between chicken, onion, and tomatoes. Repeat until skewer in 3/4 full. Grill 10-15 minutes on one side, turn and cook an additional 5 minutes.
