Radish and Cucumber Salad with Gorgonzola Cheese

Early spring radishes costar with cucumber and Gorgonzola cheese in this simple salad.


8 medium radishes, thinly sliced
1/3 English cucumber, thinly sliced
3 scallions, thinly sliced
1/4 cup crumbled Gorgonzola cheese
2 tablespoons rice vinegar
1 tablespoon extra-virgin olive oil
2 tablespoons walnuts, chopped
Salt and pepper to taste


  1. Combine all ingredients in a medium bowl and serve.
