- Yield 4 cups
- 5 ounces bag of baby spinach and mixed greens
- 1/2 cup quinoa ( cooked)
- 1/2 cup sesame seed ginger dressing
- 1 small cucumber (diced)
- 1 pint fresh fruit (whole blueberries, sliced strawberries, diced peaches)
Toss first four ingredients.
Let set for an hour.
Add fruit pieces immediately before serving.
