Feta-Stuffed Glazed Chicken Quarters

1/2cup fig preserves
1/4cup soy sauce
Juice of 1 orange or 1 lime
3ounces feta cheese
3 chicken quarters
1/2teaspoon garlic powder


  1. Preheat oven to 375F.
  2. Cut excess fat off of chicken. Combine preserves, soy sauce and juice; whisk well. Place feta under the skin of each chicken quarter. Sprinkle with garlic powder, salt and pepper. Pour preserves mixture over, and bake at 1 hour.
