Quick-and-Easy Peanut Brittle

  • Yield: 5 cups

"My brother handed this recipe down to the rest of the family. It's great - everyone I give it to loves it."


1/2cup light corn syrup
1/2cup sugar
1cup raw peanuts
1teaspoon baking soda


  1. Lightly butter a foil-lined baking sheet.
  2. Combine the corn syrup and sugar in a 1 1/2 quart saucepan. Cook over high heat until bubbly. Add the peanuts. Cook 6 minutes exactly, stirring constantly with a wooden spoon, and taking care not to burn the mixture.
  3. Remove from the heat and add the baking soda. Be careful; the mixture bubbles up when the soda is added. Stir quickly for 5 seconds.
  4. Pour the mixture onto the prepared baking sheet into a very thin layer. Cool completely before breaking into pieces. Store in an airtight container.
