Pumpkin Spiced Coconut Pancakes

3 cups Flour (or 1.5 cups of almond flour & 1.5 cups of oat flour
2 tablespoons sugar
7 teaspoons baking powder
1/2 teaspoon cinnamon
1/8 teaspoon cardamom
1 teaspoon salt
1/2 cup pumpkin puree
6 tablespoons Oil
1 cup coconut milk - found in cold dairy section


In a bowl, mix together the dry ingredients. Next add in the milk, pumpkin puree and oil. Stir until just combined. Heat slightly oiled pan on medium heat. Pour batter into heated pan and cook until both sides are golden brown. Serve warm with real maple syrup.
