Chocolate Pralines

  • Yield 2 1/2

A simple and delightful treat.


1 1/2 cups sugar
3/4 cup packed brown sugar
6 tablespoons butter
1/2 cup milk
1 1/2 cups chopped pecans
1 teaspoon vanilla extract
2 ounces unsweetened chocolate, chopped


  1. Combine the sugar, brown sugar, butter, milk, and pecans in a heavy 3-quart saucepan.  Bring to a boil over medium heat, stirring constantly.  Boil for 1 1/2 to 2 minutes or until mixture reaches 220F on a candy thermometer, stirring constantly.  Remove from heat.  Stir in the vanilla and chocolate immediately and beat with a wooden spoon for 4 to 6 minutes or until mixture begins to thicken.  Drop by teaspoonfuls onto waxed paper.  Let stand until firm.
