Creamy Potato Soup

  • Yield 3 to 5 servings

Ingredients

4 potatoes
2 onions
3 stalks of celery
1/2 teaspoon salt
2 tablespoons butter
1 cup milk
1 cup chicken broth
1/2 teaspoon paprika
1/4 teaspoon pepper

Instructions

  1. Peel and dice potatoes. Add potatoes, onions, and celery into heavy pot with enough boiling water to cover potatoes, onions and celery.  Add salt, cover and cook until potatoes are tender.  Drain and press through a sieve.  Add butter and heat.  Add enough milk and broth to reach desired consistency.  Add pepper, paprika and additional salt if needed.  Simmer 10 to 15 minutes.
