Orange Roast Chicken with Plum BBQ
- Yield servings
- 1 whole chicken cut up
- 1 1/2 cups fresh squeezed orange juice
- 1 stick of butter
- 1 -- onion chopped
- 1/2 cup ketchup
- 1/2 cup bbq sauce any variety
- 1/3 cup red wine vinegar
- 1/2 cup syrup any variety
- 1 tablespoon prepared mustard
- -- salt and pepper
Preheat oven to 375 degrees
Place washed cut up chicken pieces into a large roasting pan
Pour orange juice over chicken peices
then sprinkle chicken pieces with salt and pepper
place uncovered into 375 degrees preated oven cook for 45 mintues or until chicken begins to brown
meanhwhile, in a large sauce pan, place butter and chopped onion cook at medium high heat until onion is translucent
now add all the rest of ingredients to onion and butter mixture then lower heat to low and simmer until plum mixture becomes like a thick sauce. Stir occasionally .
When chicken begins to brown lower oven temperature to 350 and brush half of the plum sauce mixture on top of each chicken piece and bake for 15 minutes.
After 15 minutes brush the rest of the plum sauce mixture on top of chicken pieces and cook for another 10 to 15 minutes or unitl chicken begins to brown and form a nice shinny coat.
