She died when my oldest son was only 3, but I guess this was one of their ways of remembering her." Ingredients 1/2 cup shortening1 cup sugar1 egg1/2 teaspoon vanilla1/2 cup drained, crushed pineapple2 cups flour1 teaspoon baking soda1 teaspoon salt Instructions Preheat oven to 375F. Using an electric mixer, cream shortening and sugar. Beat in egg, vanilla, and pineapple. Sift flour, baking soda, and salt together, and gradually add to creamed mixture. Drop by teaspoons on an ungreased cookie sheet, flattening each slightly with fingers. Bake 12 to 15 minutes. Makes about 3 dozen.
