Perfect Oven Roasted Barramundi with Fresh Tomato Relish

Ingredients
- 2 Australis Barramundi fillets
- 1 1/2cups diced ripe tomatoes, cored and seeded
- 1clove garlic, minced
- 1tablespoon minced shallot
- 2tablespoons olive oil
- 1teaspoon red wine vinegar
- 2tablespoons chopped fresh basil
- Salt and pepper to taste
Instructions
- For the relish: Combine all ingredients (except fillets and additional oil) in bowl.
- Season with salt and pepper.
- For the fish: Place baking sheet in oven, heat to 500 degrees.
- Pat each fillet dry and coat with oil.
- Season with salt and pepper.
- Reduce oven to 275 degrees.
- Place fillets on baking sheet and roast until cooked, 6-9 minutes.
- Transfer to plates and spoon relish over fillets.
