Perfect Oven Roasted Barramundi with Fresh Tomato Relish

2 Australis Barramundi fillets
1 1/2 cups diced ripe tomatoes, cored and seeded
1 clove garlic, minced
1 tablespoon minced shallot
2 tablespoons olive oil
1 teaspoon red wine vinegar
2 tablespoons chopped fresh basil
Salt and pepper to taste


  1. For the relish: Combine all ingredients (except fillets and additional oil) in bowl.
  2. Season with salt and pepper.
  3. For the fish: Place baking sheet in oven, heat to 500 degrees.
  4. Pat each fillet dry and coat with oil.
  5. Season with salt and pepper.
  6. Reduce oven to 275 degrees.
  7. Place fillets on baking sheet and roast until cooked, 6-9 minutes.
  8. Transfer to plates and spoon relish over fillets.
