Pecan Pralines

  • Yield: 18 pieces


2cups sugar
1teaspoon baking soda
1cup buttermilk
1/8teaspoon salt
2tablespoons butter
2 1/2cups pecan halves


  1. Cobine the sugar, baking soda, buttermilk and salt in a large heavey saucepan and mix well.  Cook over high heat for 5 minutes or to 210F on a cany thermometer, stirring frequently and scraping the bottom of the pan.  Add the butter and pecans.  Cook for 5 minutes or to 234F on a candy thermometer, soft-ball stage, stirring constantly and scraping the bottom and side of the pan.  Remove from the heat and cool slightly.  Beat until think and creamy.  Drop by the tablespoonfuls onto waxed paper and let stand until cool.
