Peanut Butter Pancakes
- Yield 10 servings
Kids will love these peanut butter pancakes topped with a honey-butter syrup.
- 1 cup pancake mix
- 2 tablespoons sugar
- 1 -- egg
- 1/3 cup peanut butter
- 1 -- (5-ounce) can evaporated milk
- 1/3 cup water
- 1/4 cup (1/2 stick) butter (no substitutes), softened
- 2 tablespoons honey
- Combine the pancake mix and sugar in a large bowl. Stir with a spoon. Combine the egg and peanut butter in a small bowl. Beat with a whisk. Add the milk and water. Stir the peanut butter mixture into the pancake mixture just until moistened. Pour the batter by 1/4 cupfuls onto a lightly greased, medium-hot griddle. Turn each pancake when bubbles form on the top. Cook the pancake until the second side is golden brown. Combine the butter and honey in a small bowl and stir well. Serve over the pancakes.
