Peanut Butter Brownie Muffins

Mini peanut butter cups create a surprise center in these one-bite brownies.
- 1 (15-ounce) package brownie mix
- 1/3 cup hot water
- 1/4 cup oil
- 1 egg
- 48 miniature peanut butter cups
- Preheat oven to 350F.
- Combine brownie mix, water, oil and egg. Beat well. Fill paper-lined mini muffin tin cups 1/2 full with brownie mixture. Press 1 peanut butter cup into batter in each cup. Bake 15 to 18 minutes, or until set. Let cool completely. Makes 40 to 48.
