Peachy Upside Down Cake

4tablespoons margaine, divided
3/4cup sugar, divided
1 1/2cups sliced, peeled ripe peaches
1large egg
1teaspoon vanilla extract
1teaspoon butter extract
1cup all-purpose flour
1 1/2teaspoons baking powder
1/2cup skim milk


  1. Preheat oven to 350F. Coat a 9-inch round cake pan with nonstick cooking spray.
  2. Melt 1 tablespoon margarine and spread in the bottom of the pan. Sprinkle with 1/4 cup sugar and arrange the peaches in a circle on top, set aside.
  3. In a mixing bowl, beat together remaining 3 tablespoons margarine with 1/2 cup sugar. Add the egg, vanilla, and butter extract. Combine the flour and baking powder and add to the sugar mixture alternately with the milk beginning and ending with the flour. Carefully pour the batter over the peaches. Bake 30 to 35 minutes, or until a toothpick inserted comes out clean. Cool 5 minutes and invert onto a serving platter.
