Peach/Avacado Couscous

  • Yield: 4-6 servings


1 Pkg- 5.6ounce Couscous
2 large-- peaches
2tablespoons diced cherry tomatoes
1-- avacado diced
1/3cup slivered almonds
1/4teaspoon salt
1/4teaspoon lime zest
2tablespoons fresh squeezed lime juice
12-- basil leaves, shredded
1tablespoon diced purple onions
4ounces goat cheese, crumbled


  1. Prepare couscous according to directions, omitting spice packet.
  2. Let cool to room temperature. add all other ingredients.
  3. Stir.
  4. Let sit overnight before serving for best flavor.
