Peach/Avacado Couscous

  • Yield 4-6 servings

Ingredients

1 Pkg- 5.6 ounce Couscous
2 large -- peaches
2 tablespoons diced cherry tomatoes
1 -- avacado diced
1/3 cup slivered almonds
1/4 teaspoon salt
1/4 teaspoon lime zest
2 tablespoons fresh squeezed lime juice
12 -- basil leaves, shredded
1 tablespoon diced purple onions
4 ounces goat cheese, crumbled

Instructions

  1. Prepare couscous according to directions, omitting spice packet.
  2. Let cool to room temperature. add all other ingredients.
  3. Stir.
  4. Let sit overnight before serving for best flavor.
