Paul Bunyan Skillet Breakfast
- Yield 8-10 servings
- 2 pounds pork sausage and/or bacon
- 1 or 2 package hash browns or obrien potatoes (2 lb ea.)
- 1 stick butter
- 8 - 12 ounces shredded cheddar cheese
- several dash Salt and pepper to taste
In a very large skillet, cook sausage or bacon completely.
Remove from pan or move to the side and then add hash browns.
Cook on med-high heat until hash browns are almost done (add butter when needed).
Return meat to pan and mix into hash browns.
Crack eggs over the hash browns and scramble right in the skillet, flip in sections after a few minutes.
When eggs are cooked, add the cheese and serve when cheese is melted.
Serve with ketchup, hot sauce or salsa.
