Pasta Milanaise

  • Yield 8 servings

This one dish pasta meal features ham, fresh mushrooms and a delicious cheese sauce.


12 ounces angel hair pasta
1 1/2 -- sliced fresh mushrooms
1/2 cup butter
2 tablespoons flour
2 cups half-and-half
1 cup milk
4 ounces Cheddar cheese, shredded
1 1/2 cups ground ham
1/4 cup sherry
1 teaspoon white pepper
1 teaspoon onion juice
1 teaspoon oregano (optional)
1 -- garlic clove, crushed
-- Salt to taste
1 cup grated Parmesan cheese


  1. Cook the pasta using package directions; drain.  Saute the mushrooms in the butter in a saucepan.  Add the flour and mix well.  Add the half-and-half and milk gradually, stirring constantly.  Cook until thickened, stirring constantly.  Stir in the Cheddar cheese, ham, sherry, white pepper, onion juice, oregano, garlic and salt.  Cook until the cheese melts, stirring frequently.  Add the pasta and mix gently.  Spoon into a 2 1/2-quart baking dish.  Sprinkle with the Parmesan cheese.  Bake at 350F for 30 minutes or until bubbly.  May be prepared in advance, stored in the refrigerator and baked just before serving.
