Passover Apple Cake

  • Yield 10 to 12 servings


4 medium apples (Granny Smith, fuji or gala), peeled, cored and chopped
1/2 cup sugar
Juice of 1 lemon
1/2 cup raisins
1 teaspoon cinnamon
3/4 cup matzo meal
3 eggs, lightly beaten
1/2 cup chopped walnuts


  1. Preheat the oven to 350F. Grease a 9-by-13-inch pan with non-stick cooking spray.
  2. Combine all ingredients and place in prepared pan. Bake about 35 minutes until lightly browned and cooked through.
