Passover Apple Cake

Ingredients
- 4 medium apples (Granny Smith, fuji or gala), peeled, cored and chopped
- 1/2 cup sugar
- Juice of 1 lemon
- 1/2 cup raisins
- 1 teaspoon cinnamon
- 3/4 cup matzo meal
- 3 eggs, lightly beaten
- 1/2 cup chopped walnuts
Instructions
- Preheat the oven to 350F. Grease a 9-by-13-inch pan with non-stick cooking spray.
- Combine all ingredients and place in prepared pan. Bake about 35 minutes until lightly browned and cooked through.
