Passover Apple Cake

  • Yield: 10 to 12 servings


4medium apples (Granny Smith, fuji or gala), peeled, cored and chopped
1/2cup sugar
Juice of 1 lemon
1/2cup raisins
1teaspoon cinnamon
3/4cup matzo meal
3 eggs, lightly beaten
1/2cup chopped walnuts


  1. Preheat the oven to 350F. Grease a 9-by-13-inch pan with non-stick cooking spray.
  2. Combine all ingredients and place in prepared pan. Bake about 35 minutes until lightly browned and cooked through.
