Party Perfect Chicken

  • Yield 6 servings


1-2 pound chicken breasts OR
6 tablespoons butter
6 tablespoons flour
1 teaspoon salt
1 teaspoon ginger powder
1 can condensed beef broth
2 tablespoons flour
1 medium onion
6 slices bacon, diced, not cooked
1 tablespoon curry powder
1 tablespoon sugar
2 tablespoons shredded coconut
2 tablespoons applesauce
2 tablespoons ketchup
2 tablespoons lemon juice


Preheat oven to 350F. and put butter in baking pan to melt while preparing chicken.

Combine flour, salt, and ginger powder in a bag and shake chicken pieces to coat.

When butter is melted, roll chicken in butter and arrange skin side up (if present).

Back uncovered 15 minutes.

While baking, make the Curry Glaze.  Flavor is mild and delicious.


Empty beef broth into medium saucepan, turn heat to medium and add rest of ingredients.

Heat over medium heat to boiling, stirring often, then turn down to simmer.

After the chicken baked for 15 minutes, spoon 1/4 of glaze over chicken and bake 15 minutes more.

Spoon 1/4 of glaze over chicken again.  Bake 15 minutes more.  (45 minutes in total baking time.)

Arrange chicken around a mound of rice on a platter, sprinkling rice with chopped parsley.
