Parsley Parmesan Baked Chicken

Ingredients

4 chicken legs
2tablespoons extra-virgin olive oil
1bunch flat leaf parsley
4 organic lemons
1/4cup grated parmesan cheese

Instructions

  1. Preheat the oven to 350°F/180°C. Bake the chicken legs for 40 minutes. Season with salt and pepper. Drizzle with olive oil.
  2. Wash and chop the parsley. Zest and juice the lemons, straining out any seeds. Mix the lemon zest and juice with the Parmesan. Sprinkle over the chicken and cook for 5 minutes more.
