Vegan Parmesan Roasted Asparagus

  • Yield: 4 servings


1pound asparagus, ends trimmed
1tablespoon extra-virgin olive oil
1/4teaspoon fine sea salt
1tablespoon vegan Parmesan


  1. Preheat the oven to 425F. Line a baking sheet with foil.
  2. Arrange the asparagus in a single layer on the baking sheet and drizzle the olive oil over it to coat. Sprinkle with the salt and roast for 12 to 15 minutes or until tender.
  3. Remove from the oven and sprinkle with the vegan Parmesan.
