Orzo Salad

  • Yield 8-10 servings


8 pieces corn on the cob
1 medium red pepper
1 medium red onion
1 box orzo
1/2 cup cilantro
1/2 cup olive oil
3 pieces limes, juiced
1 teaspoon sugar
1/2 teaspoon each salt and pepper


Grill the corn and red pepper on medium hot grill until just slightly browning/charring. Cool. Prepare orzo according to package directions.  Dice onion, cut corn off cobs, dice red pepper add all to the orzo. Blend together the chopped cilantro, olive oil, juice of limes, sugar, salt and pepper. Mix all ingredients together and serve either warm or chill until serving.
