Orange Muffins

  • Yield 1 dozen

These muffins are great for a quick, on-the-go breakfast or snack.


1/2 cup (1 stick) butter, softened
3/4 cup sugar
2 -- eggs
1 teaspoon baking soda
1 cup buttermilk
2 cups flour
1/2 teaspoon salt
1 cup raisins
-- Zest of 1 orange


  1. Cream the butter and sugar in a large mixing bowl until light and fluffy.  Add the eggs and beat well.  Dissolve the baking soda in the buttermilk.  Sift the flour and salt together.  Add the flour mixture to the creamed mixture alternately with the buttermilk mixture, mixing well after each addition.  Process the raisins and orange zest in a food processor until finely chopped.  Add to the muffin batter and mix well.  Spoon the batter into 12 greased muffin cups.  Bake at 400F for 20 minutes or until golden brown.
