Orange-Glazed Pork Roast with Raisin Rice

  • Yield 4 to 6 servings

Taste the sweetness of raisins and orange juice in this delicious pork roast dish.

Ingredients

1 -- (3-pound) pork loin
1 cup orange juice
1/2 cup brown sugar, firmly packed
1/2 cup onion, chopped
1/3 cup celery, chopped
2 tablespoons butter
1 1/2 cups Minute Rice
1 cup hot water
1/2 cup raisins
1/2 cup nuts, chopped
1 1/2 teaspoons salt
1/8 teaspoon pepper

Instructions

  1. Bake pork at 350F about 2 1/2 hours.  Combine orange juice and sugar.  Baste roast with 1 cup of the mixture.  Saute onion and celery in butter.  Mix with remaining ingredients; add juice mixture.  Stir well and pour over loin.  Cover and bake last 20 minutes of roasting time.
