Orange Cranberry Rice

Oven Baked Orange Cranberry Rice

4cups water
Finely grated rind and juice from 1 orange
1/2 cup dried cranberries
2tablespoons butter
1teaspoon coarse salt
2cups basmati rice
3 green onions, thinly sliced


  1. Preheat oven to 375F.
  2. Combine water, orange rind, orange juice, dried cranberries, butter and salt in an ovenproof saucepan with a lid. Bring to a boil. Add rice and stir once. Cover and place in oven. Bake 20 minutes. Sprinkle with green onions.
