Olive and Pea Salad

  • Yield 4 servings
  • Prep approximately 20 minutes
  • Cook approximately 10 minutes


2 tablespoons chopped pitted olives
1 tablespoon capers (optional)
2 tablespoons chopped dill pickles
1 tablespoon chopped onion
1/4 cup finely diced celery
1 1/2 cups mayonnaise
1/2 cup cooked petite green peas
1 hard boiled egg, sliced
1 cup cooked diced hot boiled potatoes
Lemon juice
Salt and pepper


  1. Combine Olives and next 5 ingredients (olives through mayonnaise). Stir well.  Add potatoes, egg and peas; stir gently.  Add salt, pepper and lemon juice to taste.
