Olive and Red Pepper Relish

A no-cook relish with lots of uses.
Serve with tuna steaks, toss with white beans or layer on a pita with hummus dip.
- 12 -- olives, pitted
- 2 cups arugula
- 2 -- cloves garlic
- 1/2 -- red bell pepper
- 1/4 teaspoon salt
- 2 tablespoons extra-virgin olive oil
- 1 tablespoon fresh lemon juice
- Combine all in the food processor. Pulse just until coarsely textured.
