Olive and Red Pepper Relish

A no-cook relish with lots of uses.

Serve with tuna steaks, toss with white beans or layer on a pita with hummus dip.


12 -- olives, pitted
2 cups arugula
2 -- cloves garlic
1/2 -- red bell pepper
1/4 teaspoon salt
2 tablespoons extra-virgin olive oil
1 tablespoon fresh lemon juice


  1. Combine all in the food processor. Pulse just until coarsely textured.
