Old-Fashioned Lemon Pie

  • Yield 6 to 8 servings

This delicious pie is worth the time and effort.


1 envelope unflavored gelatin
1/2 cup sugar
1/2 teaspoon salt
4 -- egg yolks
1/3 cup lemon juice
2/3 cup water
1 teaspoon grated lemon rind
4 -- egg whites
1/2 cup sugar
1 cup whipping cream, whipped
1 -- baked pie shell
-- Whipped cream, kiwi, strawberries, cherries (optional)


  1. In saucepan, mix gelatin, 1/2 cup sugar, and 1/2 teaspoon salt.  Beat together 4 egg yolks, 1/3 cup lemon juice, 2/3 cup water and stir into gelatin mixture.  Cook and stir over medium heat just until mixture boils.  Remove from heat and stir in 1 teaspoon grated lemon rind.  Chill, stirring occasionally until partially set.  Beat 4 egg whites until soft peaks form.  Gradually add 1/2 cup sugar, beating until stiff peaks form.  Fold in gelatin mixture.  Fold in 1 cup whipping cream, whipped.  Pour into baked pie shell.  Refrigerate for at least 5 hours.  Garnish with whipped cream and kiwi, strawberries, or cherries.  Variation:  Lime may be substituted for lemon.
