PrintEmail Ingredients 1 envelope unflavored gelatin1/2 cup sugar1/2 teaspoon salt4 -- egg yolks1/3 cup lemon juice2/3 cup water1 teaspoon grated lemon rind4 -- egg whites1/2 cup sugar1 cup whipping cream, whipped1 -- baked pie shell -- Whipped cream, kiwi, strawberries, cherries (optional) Instructions In saucepan, mix gelatin, 1/2 cup sugar, and 1/2 teaspoon salt. Beat together 4 egg yolks, 1/3 cup lemon juice, 2/3 cup water and stir into gelatin mixture. Cook and stir over medium heat just until mixture boils. Remove from heat and stir in 1 teaspoon grated lemon rind. Chill, stirring occasionally until partially set. Beat 4 egg whites until soft peaks form. Gradually add 1/2 cup sugar, beating until stiff peaks form. Fold in gelatin mixture. Fold in 1 cup whipping cream, whipped. Pour into baked pie shell. Refrigerate for at least 5 hours. Garnish with whipped cream and kiwi, strawberries, or cherries. Variation: Lime may be substituted for lemon.
