Oatmeal Cake with Broiled Topping

This old-fashioned cake stars oats and cinnamon along with a topping of butter and coconut.
"This recipe has been in my family for many years. I often bake it for my brother's birthday, because it's his favorite cake. I also have taken this cake to work and church functions because everyone seems to enjoy it."
Ingredients
- Cake:
- 1 cup old-fashioned oats
- 1/2 cup (1 stick) butter, softened
- 1 cup granulated sugar
- 1 cup packed light brown sugar
- 2 eggs
- 1 teaspoon vanilla extract
- 1 1/3 cups all-purpose flour
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 1 teaspoon ground cinnamon
- Topping:
- 1/4 cup (1/2 stick) butter, softened
- 1/4 cup heavy cream
- 1 cup packed light brown sugar
- 1 cup shredded sweetened coconut
Instructions
- Preheat oven to 350F. Grease and flour a 13 x 9-inch cake pan.
- To prepare cake, pour 1 1/4 cups boiling water over the oats in a bowl. Let stand for 20 minutes. Cream the butter, sugar, and brown sugar with a mixer. Add the oats; mix well. Add the eggs and vanilla; mix well.
- Sift together the flour, baking soda, salt, and cinnamon. Add to the oats mixture; mix well. Pour into the prepared pan. Bake for 30 to 35 minutes, until browned.
- Preheat the broiler.
- To prepare the topping, combine the butter, cream, brown sugar, and coconut in a medium bowl; mix well. Spread evenly over the warm cake. Place the cake under the broiler 2 inches from the heat source. Broil until lightly browned, about 1 to 1 1/2 minutes. Cool on a wire rack.
