Oatmeal Bran Bread

  • Yield 3 pieces

This makes a delicious sandwich bread.


1 1/4 cups warm water
1 package dry yeast
1/4 cup butter or margarine
3 tablespoons brown sugar
3 tablespoons molasses
1 teaspoon salt
1/3 cup dry milk powder
1 cup boiling water
1/2 cup quick oatmeal
1/2 cup bran cereal flakes
1 1/2 cups whole wheat flour
3 cups white flour (divided use)


  1. Combine warm water and yeast; set aside.  Combine butter, brown sugar, molasses, salt, and dry milk in a large bowl.  Add boiling water and stir.  Add dissolved yeast and mix together with electric mixer on low speed.  Mix in oatmeal, bran cereal, and whole wheat flour.  Stir in 2 cups of white flour, 1 cup at a time.
  2. On a floured surface, knead in the remaining cup of white flour.  Continue kneading until smooth and elastic, about 8 to 10 minutes.  Place dough in greased bowl.  Cover and let rise until double in size, about 1 1/2 hours.  Punch down dough and let rise again until double.  Punch down, turn out on a floured surface, and shape into 3 loaves.  Place in greased 9×5-inch loaf pans.  Cover and let rise until loaves are nearly double.  Bake at 350F for 30 to 40 minutes.
