Nut Loaf

  • Yield: 4 servings


1.5cups cooked lentils (no more)
2units large carrots, grated
1.5cups walnuts, chopped
.5cup chopped onion
1.5cups bread crumbs
.25cup milk
1tablespoon butter
.25teaspoon dry mustard
Salt and pepper


  1. Preheat oven to 375F
  2. Mix all ingredients.  Transfer to an oiled loaf tin.
  3. Bake. (Baking at 375 for 45 minutes too dry. (Baking at 350 for 35 minutes did not fully cook carrots.)
