North Beach Pork Bocconcini

These little pork bites are marinated overnight them baked until tender and brown.


2 pounds boneless pork loin, cut into 3/4-inch cubes
3/4 cup cider vinegar
3/4 cup olive oil
4 tablespoons lemon juice
1 tablespoon Worcestershire sauce
1 tablespoon oregano
1 teaspoon thyme
2 cloves garlic, minced
2 teaspoons black pepper
1 teaspoon salt
1/2 teaspoon cayenne


  1. Place all ingredients in a 1-gallon self-sealing plastic bag; mix well. Seal bag and marinate in the refrigerator 8-12 hours or overnight.
  2. Heat oven to 350F. Remove pork cubes from marinade, discarding marinade. Pat pork dry with paper toweling; place cubes in a single layer, not touching, in a shallow baking pan and bake at 350F for 25 to 30 minutes, until pork is just tender and lightly browned.
  3. Remove to serving platter or chafing dish and serve hot.
