New Potato Salad
- Yield: 4 servings
- 1 1/2pounds small new potatoes, cut into quarters
- 1/2cup mayonnaise
- 1/2cup plain yogurt
- 2tablespoons chopped fresh dillweed, or 2 teaspoons dried
- 2tablespoons minced green onions, white part only
- 1/2teaspoon salt
- 1/8teaspoon pepper
- Boil potatoes in water to cover in a saucpan until tender. Drain well and let cool. Mix mayonnaise, yogurt, dillweed, green onions, salt and pepper in a large bowl. Add potatoes and mix well. Chill, covered, until serving time.
