New Orleans Chicken
- Yield 3 servings
- 1 box Zatarain's New Orleans Style Chicken Flavor Rice
- 2 cups water
- 2 tablespoons olive oil
- 1 can 8 oz crushed pineapple
- 1 cup green pepper, diced
- 12 ounces cooked chicken breast, cubed or shredded
- In 2 qt. saucepan, combine all ingredients and bring to a boil.
- Reduce heat, stir, cover, and simmer over low heat for 25 minutes.
- Remove from heat, let stand 5 minutes. Fluff and Serve.
