New England Fruit Nut Bread

- 1/2 cup cornmeal
- 1/2 cup flour
- 1/2 cup whole wheat flour
- 1 teaspoon baking soda
- 1/3 cup dark molasses
- 1 cup buttermilk
- 2/3 cup chopped California walnuts
- 1/2 cup chopped dates, dried fruit, or golden raisins
Combine all ingredients; mix well.
Line bottom of 2-cup glass measuring cup with circle of wax paper. Spoon in half of batter. Cover with vented plastic wrap.
Microwave on medium 5 to 6 minutes, rotating ½ turn after 3 minutes. Bread is done when center springs back when touched lightly.
Let stand 5 to 10 minutes. Remove. Microwave second loaf.
Makes 2 loaves
Note: May be made ahead and reheated. Cover slices with plastic wrap; microwave on high 30 to 60 seconds.
