New England Fruit Nut Bread

1/2 cup cornmeal
1/2 cup flour
1/2 cup whole wheat flour
1 teaspoon baking soda
1/3 cup dark molasses
1 cup buttermilk
2/3 cup chopped California walnuts
1/2 cup chopped dates, dried fruit, or golden raisins


  1. Combine all ingredients; mix well. 

  2. Line bottom of 2-cup glass measuring cup with circle of wax paper.  Spoon in half of batter.  Cover with vented plastic wrap. 

  3. Microwave on medium 5 to 6 minutes, rotating ½ turn after 3 minutes.  Bread is done when center springs back when touched lightly. 

  4. Let stand 5 to 10 minutes.  Remove.  Microwave second loaf.

Makes 2 loaves

Note:  May be made ahead and reheated.  Cover slices with plastic wrap; microwave on high 30 to 60 seconds.
