Never-Fail Icing (Seven Minute)

This versatile icing and will soon become your "go-to" recipe anytime you need to whip up a quick and delicious batch.


1 cup granulated sugar
1/2 teaspoon cream of tartar
3 tablespoons water
2 -- unbeaten egg whites
1 teaspoon vanilla


  1. Put all ingredients except vanilla in top of double boiler under which water is already boiling.  Beat until is stands in peaks.  Stir in vanilla.
  2. For fruit icings (such as orange, pineapple, etc.), use 3 tablespoons of the juice in place of water and 3 tablespoons grated or chopped fruit in place of vanilla.
