Never-Fail Icing (Seven Minute)

This versatile icing and will soon become your "go-to" recipe anytime you need to whip up a quick and delicious batch.
- 1 cup granulated sugar
- 1/2 teaspoon cream of tartar
- 3 tablespoons water
- 2 -- unbeaten egg whites
- 1 teaspoon vanilla
- Put all ingredients except vanilla in top of double boiler under which water is already boiling. Beat until is stands in peaks. Stir in vanilla.
- For fruit icings (such as orange, pineapple, etc.), use 3 tablespoons of the juice in place of water and 3 tablespoons grated or chopped fruit in place of vanilla.
